SAKE NEVER FIGHTS WITH FOOD

Rather it has the ability to bring out the taste of food that it accompanies. Its depth of flavour also means it can be matched with more than just Japanese food. It works well with dishes as diverse as slow-cooked stews, roast beef, prosciutto, cheese and chocolate.

Here are some suggestions for eating out or at home:

FISH TEMPURA, FRIED TOFU OR TONKATSU

The Sake uses a special type of rice called Dewa Sansan, developed to suit climate and soil. The process took 11 years to perfect. The Sake is aromatic, savoury and deep in flavour witha zingy acidity and tannin-like finish.

MATCH: Dewazakura Dewa Sansan Junmai Ginjo

SUSHI, SASHIMI, TEMPURA OR BEEF CARPACCIO

The crispness and elegance of this Sake with its zesty citrus and dry finish, makes it almost like a Riesling and perfectly matches with subtle food flavours.

MATCH: Amanoto Junmai Ginjo

RED FLESH TUNA OR UDON

Aromatic with a delicate fruity style, herbal edge and soft acidity. This highly polished Sake is best served chilled or with ice.

SEMI-HARD CHEESE

This lighter style of Sake reflects its terroir with notes of tropical fruit and a smooth texture. Serve warm or at room temperature.
